- 1 lb ground turkey
- 1 yellow onion minced
- 1 tbsp canola oil
- 1 lime zest and juice
- 1/4 cup soy sauce low sodium
- 1 tbsp fish sauce
- 1 tbsp ginger grated or finely chopped
- 1 tbsp sesame oil
- 4 cups cooked rice
- 4 persian cucumbers sliced
- 4-8 tbsp pickled red onions
If you want rice, make rice -- follow the directions on your bag of rice to yield 4 cups of rice. If you want pickled onions on top, follow these directions to make pickled onions -- they will be quick-pickles if you're making them right now before you eat. To make the ground turkey, start by heating up 1 tbsp of canola oil in a large skillet. Add the minced onion to the oil, a pinch of salt, and saute until translucent.
Add in your ground turkey and saute to let the meat brown - about 5-10 minutes on high heat.
In a bowl off to the side, mix together 1/4 cup of low sodium soy sauce, 1 tbsp of fish sauce, 1 tbsp of freshly grated ginger, the zest and juice of 1 lime, and 1 tbsp of sesame oil.
Once the turkey is all browned and cooked through, pour the soy sauce/lime juice mixture and stir to combine.
Serve with hot rice, sliced cucumbers, and pickled onions.
