  • 1.5 lb cream cheese room temperature - 3 packets
  • 3/4-1 cup Swerve sugar replacement - buy here
  • 3 large eggs
  • 1.5 cups heavy cream
  • 1 tsp kosher salt
  • 1 tsp vanilla extract
  • cup almond flour - buy here


  • Prep. Preheat the oven to 400F. Spray your springform pan with cooking spray and line it with the parchment paper. It's okay if it looks a mess.
  • Mix the cheesecake batter. In a large bowl using a handheld mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream the Swerve sugar and cream cheese until smooth. Add the salt and mix a few more turns to combine. Incorporate the eggs one by one and stir until fully incorporated. Then, pour in the cream and mix a few more times to combine. Last, rain the flour over the mixture and fold it in gently.
  • Bake the cheesecake. Pour the batter into the prepared pan and bake for 50-60 minutes, or until browned and almost burned-looking on top. This can really vary oven to oven, so it helps to have your eye on the cheesecake from 45 minutes forward. The center will still be quite jiggly, but the cake is ready. Remove from the oven and cool completely before serving.
