Savory BLT Yogurt Bowl with Chili Oil

This yogurt, bacon, lettuce, tomato +  chili oil breakfast bowl is an unexpected, incredibly delicious, low carb breakfast.

Ingredients
  

  • 2 bacon strips
  • 3/4 cup of full-fat Greek yogurt
  • 1/2 cup of arugula or any lettuce
  • 1/2 cup of chopped cherry tomatoes
  • 1 tsp of chili oil

Instructions
 

  • In a skillet, cook 2 slices of bacon until crispy. Chop into bits and set aside.
  • In a bowl, start with a layer of plain Greek yogurt. I prefer full-fat Greek yogurt. I call this the Yogurt Moat
  • Add a handful of arugula or whatever lettuce you have lying around.
  • Add some chopped cherry tomatoes
  • Sprinkle your bacon bits on top
  • Drizzle chili oil on top
