Here's a recipe savory oatmeal recipe made with bone broth, onion, oats, and topped with bacon and Parmesan. This savory oatmeal recipe is super delicious for breakfast, lunch, or dinner.

why savory oatmeal is so delicious

I loathe regular oatmeal. Gloopy blobs of paste covered in sugar and dried fruit to make it even remotely appetizing? Gross.

Savory oatmeal though? Amazing. Treated like risotto -- onions caramelized a little, deglazed with a splash of white wine, grains toasted a little before slowly hydrating them with broth, with a little pecorino romano stirred in at the end -- it's tender, umami, hearty, filling and just really freaking good. Topped with a fried egg and maybe some furikake? Omgggg.

how to make savory oatmeal, in the style of risotto

  1. Warm up a teaspoon of olive oil in a medium saute pan
  2. Chop half an onion + sweat the onions in the olive oil with a little bit of kosher salt
  3. Add in the oats and stir to combine, coating all the oats with onion/olive oil
  4. Splash white wine to deglaze pan
  5. Pour in chicken broth; stir to combine; let simmer until hydrated - about 5 minutes. Add in a tablespoon of freshly grated pecorino romano at the end
  6. Plate with a fried egg, more cheese, or some bacon if you please
