I loathe regular oatmeal. Gloopy blobs of paste covered in sugar and dried fruit to make it even remotely appetizing? Gross.

Savory oatmeal though? Amazing. Treated like risotto — onions caramelized a little, deglazed with a splash of white wine, grains toasted a little before slowly hydrating them with broth, with a little pecorino romano stirred in at the end — it’s tender, umami, hearty, filling and just really freaking good. Topped with a fried egg and maybe some furikake? Omgggg.

  1. Warm up a teaspoon of olive oil in a medium saute pan
  2. Chop half an onion + sweat the onions in the olive oil with a little bit of kosher salt
  3. Add in the oats and stir to combine, coating all the oats with onion/olive oil
  4. Splash white wine to deglaze pan
  5. Pour in chicken broth; stir to combine; let simmer until hydrated – about 5 minutes. Add in a tablespoon of freshly grated pecorino romano at the end
  6. Plate with a fried egg, more cheese, or some bacon if you please
