Bone broth - basically chicken stock made with bones you have at home - is so EASY to make you should NEVER buy it again. You can make bone broth at home with almost any combination of chicken bones, weird chicken parts, or even leftovers from a rotisserie chicken from the supermarket. All you need are bones and water and a few onion/aromatics/members of the allium family.

  • Use an instant pot! instant pot makes bone broth SO quickly.
  • Find 1-2 lbs of bones (2 carcasses from the weekly bird roast saved in the freezer) or collagen-y parts of the bird (like the feet!). a pile of aromatics: leeks, 1 or 2 onions, celery, a knob of ginger, whatever (i don't personally add carrots bc it adds too much sweetness for me). seasoning: 1-2 teaspoon of fish sauce.
  • Cover with water (8 cups?) and instant-pot it on high pressure for 1 hr
  • Strain into a pitcher or freeze for later
