Roasted Garlic Bread on Baguette

Here's a recipe for roasted garlic bread, made on a sourdough baguette. This recipe could just as easily be for French bread - the proportions work for any long baguette-shaped bread. Roasting garlic infuses a sweet, umami flavor into your garlic bread spread that adds so much depth of flavor! This is a perfect side dish to a hearty salad like this shaved brussels sprouts salad - serve with some red wine, and you have yourself a dinner. I'm obsessed with this baguette garlic bread recipe.

I came up with this recipe when I realized I had 4 garlic heads sitting on my counter, alongside a beautiful baguette of sourdough bread.

Homemade garlic bread is super easy to make. There's no reason to buy a pre-made one from the store that's loaded with sodium and excess sugar. Just mix together garlic, butter, cheese, and spread it on top of whatever bread you like. Tada!

It was so yummy that I had to stop myself from eating the whole thing!

How to make garlic bread on a baguete

The basic steps here are that you're going to roast a lot of garlic, which makes the garlic less bitter and more sweet. Then, you'll mash the roasted garlic with 1 stick of softened butter and some shredded Parmesan cheese. Next, you spread the garlic butter spread on top of your freshly-sliced sourdough baguette, and bake it in the oven for about 20 minutes at 425F.

Finish with some fresh parsley and voila!

  1. Preheat your oven to 425F
  2. Cut off the tops of 4 garlic heads and drizzle a small amount of olive oil and salt on top 
  3. Roast the garlic on a baking sheet for 20 minutes in the oven. Don't turn off the oven now! Keep it on for when you bake the garlic bread.
  4. Let the garlic cool down before, or use a glove/oven mitt to handle the garlic, you squeeze out the garlic into a bowl. You should have about ½ cup - ¾ cup of roasted garlic. 
  5. Mash in 1 stick of softened butter, and the ⅔ cup of shredded Parmesan cheese. 
  6. Slice a baguette in half, long ways, so you have two long halves of bread. 
  7. Spread the garlic/Parmesan/butter mixture onto each side of a baguette. 
  8. Bake in the oven for 20 minutes. 
  9. Sprinkle ~¼ cup of freshly chopped parsley on top and serve!

How do you store this and how long can it be stored?

  • Store this roasted garlic bread by wrapping tightly in plastic wrap, and putting in the fridge. Air is the enemy of bread -- this won't last very long. I would give it 1 day past when you make it.

How do you reheat garlic bread?

  • The best way to reheat garlic bread is in the oven. Bake it at 350 for 3-5 minutes.

Is this recipe low carb/keto?

  • Nope, sorry! Bread is just... not low carb, any way you slice it.

Can this roasted garlic bread recipe be made spicy?

  • Yes! Add red pepper flakes into the garlic-butter mixture. Start with a teaspoon and add more if you know you like it spicy.

What if I don't have time to roast the garlic - can I use regular garlic, or store-bought jarred garlic?

  • Sure. My recipe calls for 4 heads' worth of garlic cloves, which is about a ½ cup of packed jarred/chopped fresh garlic.

Ingredients
  

  • 1 whole sourdough baguette about 12-18 inches long, or 300g in weight. I got a baguette from Tartine for this recipe!
  • 4 whole medium heads of garlic
  • 1 tablespoon of olive oil
  • 1 Pinch salt
  • 1 stick butter softened
  • ⅔ cup shredded Parmesan cheese
  • ¼ cup fresh parsley for sprinkling at the end

Instructions
