A Keto Burnt Basque Cheesecake Recipe

Here is a keto cheesecake recipe that levels up what a keto cheesecake can be. Tarta de queso, known as gazta tarta in the Basque Region, is a cheesecake that is crustless, creamy, tender, and really amazing — it’s known as Burnt Basque Cheesecake here in the states. It’s also less sweet than the New York-style cheesecake. This Keto Burnt Basque Cheesecake is insanely delicious and has only 5 net carbs per serving.

According to the author of the cookbook Basque Country, ” The deeply caramelized cross between a dense New York-style cheesecake and Spanish flan.”

How to make a keto Basque cheesecake

You will need:

  • a 9" springform pan - I use this one
  • a sheet of parchment paper
  • 1.5 lb. cream cheese, room temperature - 3 packets
  • ¾-1 cup Swerve sugar replacement - buy here
  • 3 large eggs
  • 1.5 cups heavy cream
  • 1 tsp. kosher salt
  • 1 tsp. vanilla extract
  • ⅓ cup almond flour - buy here

The steps are:

  1. Prep. Preheat the oven to 400F. Spray your springform pan with cooking spray and line it with the parchment paper. It's okay if it looks a mess.
  2. Mix the cheesecake batter. In a large bowl using a handheld mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream the Swerve sugar and cream cheese until smooth. Add the salt and mix a few more turns to combine. Incorporate the eggs one by one and stir until fully incorporated. Then, pour in the cream and mix a few more times to combine. Last, rain the flour over the mixture and fold it in gently.
  3. Bake the cheesecake. Pour the batter into the prepared pan and bake for 50-60 minutes, or until browned and almost burned-looking on top. This can really vary oven to oven, so it helps to have your eye on the cheesecake from 45 minutes forward. The center will still be quite jiggly, but the cake is ready. Remove from the oven and cool completely before serving.
