Here is a recipe for blueberry bars! These are inspired by blueberry muffins, but made into a bar formation. Whereas blueberry muffins can be dry and the ratio of blueberries to dough is off, these are perfectly jammy with the high blueberry content, have great lemon-zesty notes, and won’t put you into a sugar coma.

How to make blueberry bars

  1. Preheat oven to 375F. Line an 8×8″ pan with parchment.
  2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, baking powder, salt, and lemon zest. Use a fork or pastry cutter to blend in the butter and egg.
  3. Pat half of dough into the prepared pan.
  4. In another bowl, stir together blueberries, sugar, cornstarch, and lemon juice. Pour the blueberry mixture evenly over the crust.
  5. Crumble remaining dough over the berry layer.
  6. Bake for 45 minutes, or until slightly brown. You might need to broil it for no more than 30 seconds to get that nice brownness on top.
  7. Cool completely before cutting into squares.

Pro tips for making blueberry muffin bars

If the tops of the bars aren’t quite browned after 40ish minutes, you can broil them for a few seconds just to get that crispness. Then, let them cool and voila! You’re done.
